This steak belongs to a category of beef called flat steaks which also includes flank and flat iron steak. While these steaks may not be the most tender of cuts, they are still absolutely delicious and versatile when properly cooked and prepared.
Hanger steak is best when tenderized with marinade then cooked medium to medium-rare.
Alternatively you can use it in making stir fry or beef stroganoff.

Our herd of cattle is made up mostly of Belted Galloway cows (aka Oreo Cows).
This breed of cow produces exceptionally lean and flavorful meat.
