Preparation Hint: For uniform thickness before cooking, I take my Grandmother's old rolling pin and pound the meat a few times until it is more uniform in thickness. I rinse the pieces with water. Pat them dry. Dip each piece in Coconut Oil. Place pieces in a pie plate of seasoned panko crumbs. Bake the chicken on a parchment lined shallow pan in a 425 degree oven for 12 minutes. Test for 165 degree internal temperature of the meat. Enjoy!
