This muscle cut is hard working and in the case of Beef Cattle that is at least 6 to 8 hours a day chewing grass.
All this movement of the cheek muscles means a lot of connective tissue which, on one hand requires slow gentle cooking but on the other hand rewards us with a cut of beef riddled with strands of tasty, healthy collagen, gelatin and rich savory beef.
This cut needs to be cooked low and slow either braised or stewed.
But it is worth the wait!
All that connective tissue and gelatin results in a uniquely tender falling off the fork, tender, juicy cut of beef.

Our herd of cattle is made up mostly of Belted Galloway cows (aka Oreo Cows).
This breed of cow produces exceptionally lean and flavorful meat.
The cows at POP Acres spend their days out on fertile pastures happily grazing on fresh grass and foraging for wild edibles.
